Lyle's speg sauce
1 medium onion, chopped
1 pound ground beef
1/4 tsp garlic
1 8 oz can Contadina Tomato sauce
1 4 oz can Contadina Tomato paste
1 cup hot water
1 tsp salt
2 tsp sugar
3 tsp Italian seasoning
8 medium button mushrooms
Boil one pound of vermicelli or thin speghetti for about 7 min.
Fry the ground round until half to 2/3 cooked and drain the oil. Throw in the onions, cover, and stir occasionally until the onions are tender. Throw all the other ingredients in, in order of above and let simmer for 30-60 min for best results but can be serve immediately if you are hungry.
Sue's Chicken Rice (1/97)
Microwave 5 frozen chicken breast (boneless) for 8 min
In a large covered skillet(chicken water) add:
4 cup hot water
6 chicken boulian cubes or 4 large chicken-tomato bouilian
1 tsp minced garlic
1 T italian seasoning
* Add the chicken and let cook 10 minutes covered OPTIONAL: remove
2 cups liquid for making chicken pot pie.
In a sauce pan:
1 medium/large onion (chopped)
4 T margarine
1/2 cup flour
1/4 cup dry parmesan cheese
2 cup milk
Saute onion & margarine first and then add flour, stir. Add cheese,stir, then add milk slowly with stirring. When thick add to chicken water.
Chicken Stroganoff 7/96
8 pieces of boneless/skinless chicken thigh (4 pc nuked at hi for 5 min)
1 large chopped onion
6 T flour
2 x 1.5 oz Mrs Grass onion soup mix
2 1/2 cup of water
1 cup milk
1 red pepper chopped
7 cup Extra wide noodles
Start boiling the noodles first thing since once the sauce is started,
it will be done pretty quick.
Cut with scissors the chicken into small pieces, cook til 1/2 brown, drain the oil, and complete cooking covered with the onions stirred in. When the chicken/onion take on a slightly dried and slight burnt look, add the flour while off the stove and stir into a pasty ball. Add the onion soup mix and then the water and milk and let it simmers covered at medium low until it thickens. Add more water as it simmers for the desired thickness. After 10-15 minutes pour the sauce onto the cooked washed pasta.
Sue's Fettucine Alfredo
Stir fry in a medium sauce pan:
1 medium/large onion, chopped
4 tbs margarine
1/2 tsp garlic
Add when the onions are soft:
4 tbs flour
1/2 cup Parmesan cheese dehydrated
*Mix well to form a paste.
Then mix in
1 tsp salt
2 cups milk
* Cook until it thickens slightly
Boil:
12 oz of Fettucine noodles or 6 cups wide noodles for about 7 min. Wash the noodles under hot water and then add the alfredo sauce and keep covered while serving.
Chicken Pot Pie

2 cups chick broth from tomato chicken & rice recipe
1 pkg frozen mixed vegetables
3 pcs thawed chicken (nuke 4 min high, turn over, 4 min more)
Heat in saucepan to boil, reduce heat.
1/2 frozen chopped onion
4 T marg
1/2 cup flour
1 cup milk
Saute onion in margarine. Add flour, stir into ball. Add milk slowly, stir. Keep at medium heat. when thick, add to above chick broth pan and cook covered at medium high for 20 minutes.
Roll two pie crusts. Lay bottom crust in pie pan, add cooked chick sauce, lay top crust. Bake at 400 for 35 minutes.
Tuna Noodle casserole 2/88
(without the Tuna!)
5 cup medium to extra wide noodles (start first thing)
1/2 medium onion chopped
1 cup Celery (about 3 stalks, chopped)
2 tbs margarine
1 tsp Salt
2 tbs flour, all-purpose
1 Cream of Mushroom soup, condense, 10 3/4 oz can
1 cup Milk
1 tsp Italian seasoning
2 oz Frozen green peas
In a sauce pan fry the onion & celery with the salt in the margarine until tender. Then add the flour to form a paste. Add the cream of mush room soup, milk, italian seasoning, and peas. Mix well and let simmer on low to medium low until desired thickness. Pour over the noodles and let sit 5-10 minutes before serving.
Cashew Cheese Sauce (for rice)

1 cup water
1 cup raw organic cashews, ground in coffee grinder
4-5 sun-dried tomatos, snipped in small pieces with scissors
1/2 chopped red pepper
1/3 cup fresh lemon juice and its pulp
2 T sesame seeds
4 T nutritional yeast
1 clove garlic, minced
1 T soy sauce
Heat all in saucepan over medium heat, stirring frequently until thick (5 minutes). Pour over rice or vegetables.
Tofu Scramble
(Jenny's.. as of 3/97)
1 pkg Firm Tofu, squeeze out water & crumble
1 chopped onion sauteed in 2 T canola oil
2 tsp dill weed
1/2 tsp Turmeric
2T soy sauce
Saute onion first, then heat all in skillet over medium heat.
Just before serving, add 2T Nutritional Yeast.
Vegetable -stir fry (7/95)
2 tbs Canola Oil
1-1.5 lbs Fresh String beans or snow peas
1 -1.5 medium onion
soy sauce to taste
1.5-2 tsp dehydrated nigerian ginger finely chopped and soaked in 1/8 cup of hot water
Cut up the beans into 1 1/2 inch strips (or destring the peas)and starting frying in a cast iron pan with the onions with covering on medium heat & constant stirring. Add the soy sauce sparingly.
Hash Browns (2/23/93)
3 Large (4") or 5 medium(3") potatoes
1.5 medium (2") onion
3 tbs Canola oil
1 Green or Red pepper
1/8 tsp Black pepper
1.75 tsp Salt
Cut potatoes into ideally one centimeter squares (usually ends up 1x3 cm or so) Cook on medium to medium high uncovered with occasion stirring until potatoes get tender (usually when they start browning)
Sue's Stuffed Tomatoes

1/4 tsp salt
1/4 tsp pepper
1/2 tsp dry garlic
1 T chopped onion
1/4 tsp basil
1/4 tsp italian seasoning
6 crumbled saltine cracker squares
1 T parsley
2 T olive oil
2T dry parmesan cheese
Mix above in bowl.
Cut two tomatoes in half and poke out juice with fingers.
Stuff holes tight with mixture. Bake at 400 for 30 minutes.
Mary Beckman's Caramel Corn (11/96)
1 cup Butter
2 cups Brown sugar
1/2 cup Corn syrup
1 tsp salt
1/2 tsp baking soda
1 tsp vanilla
6 Qts Popcorn(popped via dryair)
In a 3 qt sauce pan, on med heat, bring butter, brown sugar, corn syrup, and salt to a boil, stirring constantly. Boil for five minutes with no stirring. Remove from heat. Stir in baking soda, vanilla. (Caramel will change color). Pour over Popcorn in a disposable turkey basting pan and stir. Bake at 250oF for about 1 hour stirring every 15 to 20 minutes.
Mom's Blueberry Buckle (12/15/92)
1/2 cup Shortening
1/2 cup Sugar
1 egg
1/2 cup milk
2 cup Flour
2 1/2 teaspoon Baking powder
1/4 teaspoon Salt
Cut in sugar into shortening well then add the rest of above with the flour,baking soda, and salt as a premixed powder. Mix well until uniform and lumps are out. Spread into a greased square plan.
Pour on top the following mix:
2 cups Blueberries (recommend 16 oz)
1/4 cup Sugar
1/2 tsp Cinnamon
1/4 cup Butter crumbled using lots of flour
Let bake for 350oF for 75 minutes. Let cool uncovered and then cover when cool.
Arlene's Butter Cookies

1 cup butter (or margarine)
3/4 cup corn starch
1/3 cup confectioners sugar
1 cup flour
* Mix butter, corn starch & powdered sugar together until throughly
combined
* Chill dough for one hour
* Form one inch balls
* Place balls on ungreased cookie sheet and flatten
* Sprinkle with colored sugar if desired
* Bake at 325oF for 15 minutes.
Yield 36 to 42 1-1.5 inch cookies
Pie Crust
(2 crusts)
2 cups flour
1 tsp salt
2/3 cup softened marg (nuke for 20 sec)
6 T cold water
Add and mix one ingredient at a time in the order above.
Divide into two balls. May be rolled out & used immediately or frozen for later use.
Shortcake "Scone" Bisquits

8 bisquits
2 cups flour
1 T baking powder
1 tsp salt
1/4 cup sugar
1/4 cup softened marg (nuke 20 sec)
1 cup milk
Stir all dry stuff in bowl. Add marg & mix with fork. Add milk, stir.
Drop onto baking sheet and bake at 450 for 18 minutes.
Sue's Favorite Brownies

3/4 cup softened marg (nuke 20 sec)
1 1/2 cups sugar
1 1/2 tsp vanilla
3 eggs
Mix marg, sugar, vanilla in bowl. Add eggs and beat with fork.
3/4 cups flour
1/2 cup dry cocoa powder
1/2 tsp baking powder
1/2 tsp salt
Mix all dry stuff. Add slowly to above bowl, stirring. Spread in buttered square pan. Bake at 350 for 1 hour.
Turn off oven & leave it in there.
